The amazing Sarah at Why Food Works created these nutrient packed balls for a hearty breakfast on the go or healthy dessert option. We've served them several times at our Watercolor + Mindful Eating + Healthy Tasting Menu events and they are a fan favorite. I like making a batch at the beginning of the week so I never have an excuse to skip a healthy breakfast, even if it's just a few bites.
These energy bites are dairy, peanut, and gluten-free. Packed with 3g of fiber and 3g protein, each bite has about 120 calories and is perfect for breakfast, a snack, or hiking or camping!
½ c Slivered almonds
½ c Gluten-free rolled oats
½ c Shredded sweetened coconut
½ c Tehina
¼ c Chia seeds
16 Pitted dried dates
4 oz Semi sweet chocolate, melted
In a blender or food processor, mix the almonds, oats, chia seeds, and coconut. Add dates, pulse until evenly mixed. Drizzle in tahini while the blender is running and pulse until evenly distributed.
Pour into a bowl and use hands to shape small, bite-sized balls. Dip half of each bite in melted chocolate, chill in fridge until set. Makes about 25 that are slightly smaller than ping pong balls.
